What I Ate Wednesday!

Great thanks to Jen at Peas & Crayons for hosting this lovely community of food lovers 🙂

Life been a little hectic… it’s my busy season at work. I haven’t been taking consistent photos, so here a collection of things I’ve eaten when I’ve had the time to slap some things together and relax in front of my t.v.

Whether it be in the morning or evening, I always drink about 2 oz. of aloe juice.  It’s so soothing!

Grilled, or charred, sweet potato tacos – sweet potatos, salsa and guacamole.

Banana oatmeal pancakes with sunflower butter.

Vegan Mexican pizza! (recipe to follow… seriously!)

What have you been eating lately?  When you get into a busy season, do you tend to buy/eat more prepared foods or prepare food in batches (given you have the time) ??
