What I Ate Wednesday #3

What I Ate Wednesday is a community created by Jen from Peas and Crayons.  Take the time to browse the blogs that participate and learn about some amazing good foods!

I’ve been starting my day with a basic green smoothie:

1.5 c. of Vanilla Almond Milk

1 banana

and a lot of spinach (maybe it’s about 2.5 cups? I just put it in by the handfuls)

about 2-3 tbsp. of Agave for sweetness

SO. SO. GOOD.

For lunch I had a black bean salad type dish I made out of black beans, fire roasted tomatoes (from a tin), red onion, capsicum, jalapenos, and lots of cilantro.  Work has been so crazy as of late I’ve neglected to take a photo here or there of my lunch.

My snack was an apple with peanut butter… it doesn’t make for an exciting picture.

Dinner was a pot of soup that I had put together over the weekend.  It was a rainy weekend and when I woke up I thought about how I wanted to make a good big pot of veggie soup.  Even though it was the first week of spring and I’m pumped about growing all my veggies and getting my garden together and grilling/roasting lots of veggies… I just couldn’t shake the want to make a big ol’ pot of veggie soup!  Perhaps it was because I was kinda robbed of fall/winter soups? Between 10-12 hour work days, holiday, packing, moving, unpacking, surgery… I didn’t really get around to making soup.  I didn’t even make anything in the slow cooker!

So, I put together a veggie soup with more fire roasted tomatoes, courgette, squash, fresh rosemary, fresh parsley, red potatoes, great northern beans, shallots, and lots of garlic.  I was going to put in some kale, but I opted to have a kale salad with my soup.  Is there anything better than a kale, fennel, and apple salad? Yes, but not at the moment.

see my keyboard there? a very last minute picture!

I’ve lacked some fruit and protein the past week(ish?).  I’m trying to work on that… I haven’t had the time to go pick strawberries or blackberries since they’ve been in season and I didn’t even realize that I’ve left out protein.  Plus, I’ve realized I need to put in an order with SunWarrior STAT!

What have you been eating lately?!

  1. Understanding both advantages and disadvantages are
important in order to choose the best internet marketing strategy.
However Yahoo marketing and other pay per click search engines offer some excellent traffic at a more reasonable price.
It’s probably some mix of the two, so I have to give
him props for not going too far in either direction.
