Well, I read yesterday that the WIAW community goal is to consume an extra cup of veggies for April. This is good, because I just made another batch of veggie juice ice cubes for my smoothies! Um, I hope that’s counts 🙂

Currently, my comumute to work is too long and now that I’m off crutches and have been moving around a bit more I’ve needed a little more energy boosting foods. I’ve been starting my day with some awesome overnight oats. I would normally heat up the overnight oats if I would put peanut butter in them, but I have this runny peanut butter and thought, “this could work with cold oats!” Sure enough, several tablespoons of runny peanut butter stays runny enough to enjoy cold overnight oats. What also makes them so awesome is some extra of this:
1/2 c. Rolled oats
3/4 c. Almond milk
3 tbsp. Of peanut butter
1 tsp. Raw sugar (you know, just a little sweetness)
And some healthy turns of the TJs Sugar, Chocolate & Coffee Bean Grinder
(I’m not sure that any picture makes overnight oats look attractive)
Once I got to work I drank my Spinach & fruit smoothie:
I had a little bit of a sweet tooth for lunch:
wheat bread, peanut butter, banana, sprinkled with some honey and cinnamon & sugar 🙂
I’ve then snacked on either a plum or apple between lunch and dinner.
I tend to make my lunch and dinner in batches for during the week, so I made a really great curry on Sunday:
I’m going to post this recipe tomorrow or Friday. I’ve normally made curry and followed a recipe, but I just kinda winged it this time. According to an office helper, I did well. Since she’s been making curry with her mom most of her life, I take that as a good sign!

mmmm that lunch sandwich is right up my alley. i always have that sweet tooth! i can’t escape it!
it’s SO good! had it for breakfast this morning and I was thinking how it was a pretty good idea that I followed through with.
I’ve been looking for that sugar/coffee grinder at my TJ’s forever and they never have it! And my commute to and from work is also much too long =(. It can get so frustrating!
What makes my limited time at home easier is pre-preparing lunch & dinner. I heard sometimes the grinders come and go in seasons… hopefully this one is a regular at my TJs!
