What I Ate Wednesday!

OMG. It has been FOREVER since I’ve done one of these posts! I’d like to get back into it because it’ll be great to share recipes (when I have them) and share what I’m eating on my weight training journey.

I’m not on a special diet. I prefer to eat gluten free and dairy free as often as possible. Key words: as often as possible. I love a good pizza. I love good mac and cheese. I really love Roquefort cheese on a fresh baguette. I don’t eat meat, but I do eat seafood. I used to be a vegan, I love vegan food, but I have a slight (self diagnosed) soy allergy and protein form legumes was not cuttin’ it.

Alright, let’s get to it!

I started my day with 1/3 – 1/2 c. of chia pudding with blueberries and cinnamon and a cup of coffee:


After I got to work and had another cup of coffee, I had a green protein smoothe:


For lunch I had this amazing veggie stew/chili concoction of pureed butternut squash, lentils, garlic, onions, red chili pepper, zucchini, squash, and tomatoes. I added in some parsley, basil (that was a good accident, I intended to go for the parsley again), smoked paprika, and a good shake of cumin:


There’s an apple with almond butter there too!

A few hours later I had my favorite Trader Joe’s mix (almonds, cashews and dark chocolate):

After my work out I had some tilapia, scallops, and a kale salad with the veggie works. Unfortunately, I forgot to take a picture of my salad. I was too hungry!


No dessert!

I’m not anti-sugar. Cookies are the way to my heart. I eat several hours before bed, but having sugar before bed disrupts my sleep. I love my sleep!
