What I Ate Wednesday!

AH!  It’s Wednesday!  It’s hard to believe, because this week feels like it’s dragged on.  Luckily, I haven’t relied on coffee to get me through, just under-eye concealer!

I’m really into this Strawberry Banana Cashew smoothie lately:

almost 1.5 c. of almond milk

1 banana

strawberries

about 2 palm fulls of raw cashews

1 scoop of Vanilla Sun Warrior Protein

agave nectar to taste

So, I moved to the country side of Delaware in November and well, there aren’t very many coffee shops.  Starbucks isn’t nearby.  I’m still getting used to it and it’s been nearly 6 months.  I was driving through the itty bitty town next door and found a coffee shop!  The Young Bean Coffee Shop is adorable and quaint and absolutely lovely!  I had a great Raspberry Coconut latte:

When in a pinch, I always rely on Trader Joe’s for some good frozen food finds.  This Chana Masala is sooooooooooo good.  There’s been a time or two that I’ve consumed two of these.  It’s great with naan!

I got my act together to make some dinner and had some sweet potato tacos!  Tortillas are always in stock in my home, I grew with my great grandmother keeping us stocked with her homemade tortillas.  Have you ever met a tortilla snob?  I am one.

I grilled some sweet potatoes, made some simple guacamole, added some Trader Joe’s Garlic Chipotle salsa, and a little hot sauce:

One of my favorite burrito combinations is sweet potatoes, black beans, spicy rice, guacamole, and salsa.  Sweet potatoes are amazing with ‘Mexican’ or Tex-Mex food.  It’s a great vegetarian meal and I use sweet potatoes more than tempeh in such meals.

Well, that’s all I ate.  Cinco de Mayo wasn’t as festive because of the overcast weather and closet cleaning.

  1. That smoothie sounds great! I love cashews but have never put them in a smoothie. MMM:))
    Were the bananas and strawberries frozen?

    Also, I’m heading to Delaware a little later this month to visit my boyfriend’s grandma. It’ll be my first time there, sounds like a beautiful state!

    1. Frozen strawberries & room temp bananas… the room temp bananas & cashews help with the thickness and creaminess! Raw cashews are key!

      DE is beautiful, but I’m a city girl and still adjusting in some areas. Luckily, I’ve always been exposed to the country-side growing up… but living in it is an adjustment! Enjoy your visit!
